Heat oil in pan and sauté cumin seeds for a few minutes until fragrant
Add the diced onions and cook on medium heat for 4-5 minutes until softened
As the onions are cooking chop the tomatoes then add into pan before cooking for 5 minutes until the tomatoes are soft
Add the salt, chilli powder, turmeric powder and garam masala then cook the spices for a few minutes
Add the finely chopped green chillies and 2 tablespoons of the water to ensure that the spices do not burn and to give a more intense colour then cook for 2-3 minutes
Add the spices are cooking peel and chop the potatoes then add into the pan along with the rest of the water then cover and cook for 15 minutes until the potatoes soften
Add the dried fenugreek leaves and finely chopped coriander then cook for 1-2 minutes
