Marinade:
- 1 kg Chicken Wings
- 1 tsp Salt/Namak
- 1 tsp Black Pepper/Kali Mirch Powder
- 1 tsp Chilli Powder/Lal Mirch Powder
- 1 tsp Paprika
Flour Coating:
- 150 g Plain Flour
- 50 g Cornflour
- 1 tsp Salt/Namak
- 1 tsp Black Pepper/Kali Mirch Powder
- 1 tsp Chilli Powder/Lal Mirch Powder
- 1 tsp Paprika
Buffalo Sauce:
- 100 g Butter
- 150 ml Hot Sauce
- 1 tsp Vinegar/Sirka
- 1 tsp Cayenne Pepper
Pat the chicken wings dry thoroughly then add the salt, black pepper, chilli powder and ensure that the spices evenly coat the chicken wings before setting aside
In another bowl add all the ingredients for the flour coating then stir until well combined
Heat a pan with oil for deep frying until medium-hot ensuring that the oil is not too hot – to test this you can add a small ball of the dough into the pan, and it should rise with tiny bubbles surrounding it
When ready to fry dip the chicken wings into the flour coating one by one, shaking off any excess flour on the chicken, then add the wings into the fryer - there should be tiny bubbles surrounding them – and allow the wings to cook undisturbed for 4-6 minutes until golden brown before flipping and allowing to cook for another 4-6 minutes until golden brown on the other side
Once all the chicken wings have been fried set aside the wings and allow the oil to drain from the wings
In another pan melt the butter completely on low heat before adding the hot sauce, vinegar and cayenne pepper then cook on medium heat for 2-3 minutes until sauce thickens
Add the fried chicken wings and cook for a further 1-2 minutes until the chicken wings are fully coated with the buffalo sauce
