Chocolate Sponge:
- 150 g Plain Flour
- 300 g Sugar
- 50 g Cocoa Powder
- 1 tsp. Baking Powder
- 1 tsp. Bicarbonate of Soda
- 100 ml Milk
- 100 ml Oil
- 1 tsp. Vanilla Extract
- 2 Eggs
- 100 ml Water hot
Fudge Frosting:
- 150 ml Double Cream
- 200 g Milk Chocolate
- 50 g Butter
- 50 g Icing Sugar
- 1 tsp. Vanilla Extract
Preheat oven to 190°C/375°F/gas mark 5 and line an 11.8 x 7.5-inch (30 x 19 cm) baking tray with parchment paper
In a mixing bowl combine the plain flour, granulated sugar, cocoa, baking soda and baking powder
In another bowl, combine the milk, vegetable oil, vanilla extract and eggs
Sift the dry ingredients into the wet ingredients then beat until well combined
Add the hot water to the batter slowly and mix until combined
Pour batter into tin then bake in the centre of a preheated oven for 30-40 minutes
Leave to cool in pan for 5 minutes before removing from the tin to allow to cool completely
In a large saucepan add the double cream, milk chocolate, butter, icing sugar and vanilla extract then continuously stir the mixture until smooth on low heat
Leave to cool until thickened then spread across the chocolate cake and decorate with coloured sprinkles
