Ingredients

Chocolate Sponge:

  • 150 g Plain Flour
  • 300 g Sugar
  • 50 g Cocoa Powder
  • 1 tsp. Baking Powder
  • 1 tsp. Bicarbonate of Soda
  • 100 ml Milk
  • 100 ml Oil
  • 1 tsp. Vanilla Extract
  • 2 Eggs
  • 100 ml Water hot

Fudge Frosting:

  • 150 ml Double Cream
  • 200 g Milk Chocolate
  • 50 g Butter
  • 50 g Icing Sugar
  • 1 tsp. Vanilla Extract

Instructions

  • Preheat oven to 190°C/375°F/gas mark 5 and line an 11.8 x 7.5-inch (30 x 19 cm) baking tray with parchment paper
  • In a mixing bowl combine the plain flour, granulated sugar, cocoa, baking soda and baking powder
  • In another bowl, combine the milk, vegetable oil, vanilla extract and eggs
  • Sift the dry ingredients into the wet ingredients then beat until well combined
  • Add the hot water to the batter slowly and mix until combined
  • Pour batter into tin then bake in the centre of a preheated oven for 30-40 minutes
  • Leave to cool in pan for 5 minutes before removing from the tin to allow to cool completely
  • In a large saucepan add the double cream, milk chocolate, butter, icing sugar and vanilla extract then continuously stir the mixture until smooth on low heat
  • Leave to cool until thickened then spread across the chocolate cake and decorate with coloured sprinkles
  • Your chocolate traybake is ready!
