These apricot jam doughnuts are made with a brioche dough then filled with apricot jam. Soft and airy on the inside make a batch of these sweet jam doughnuts for the ultimate indulgent treat.

Ingredients

  • 250 g Plain Flour
  • 100 ml Water warm
  • 50 g Butter
  • 2 tbsp Sugar
  • 2 Eggs
  • ½ tsp Yeast active dry
  • ½ tsp Salt
  • Apricot Jam

Instructions

  • Add the sugar and the yeast to the water then set aside to allow the yeast to ferment
  • In another bowl beat the eggs until well combined
  • Cut the butter into small cubes then set aside
  • Once there are bubbles beginning to form on top of the yeast mixture add the eggs, salt and flour to the mixture then mix until a dough begins to form
  • Add the cubed butter gradually and begin to knead the dough with your hands until all the butter has been incorporated and the dough is glossy and smooth
  • Cover the bowl with clingfilm then allow to proof at room temperature for about 2 hours until doubled in size before punching down the dough and recovering and refrigerating overnight
  • Once ready remove the dough from the fridge and separate into ~70g pieces then shape each piece into smooth balls and place on a baking tray lined with parchment paper then dust with flour (see note 1)
  • Cover lightly and leave for 1 hour until doubled in size
  • Heat a pan with oil for deep frying until medium-hot ensuring that the oil is not too hot – to test this you can add a small ball of the dough into the pan, and it should rise with tiny bubbles surrounding it
  • Remove the doughnuts from the tray, ensuring that you do not deflate then gently add to the pan and fry for 3 minutes on easy side until golden brown
  • Remove from oil then place on a wire rack to allow any excess oil to drip away
  • Whilst still warm roll in icing sugar then set aside to cool before filling
  • Fill a piping bag with apricot jam then pipe until the doughnut is filled
  • Your apricot jam doughnuts are ready!

Notes

Note 1 – Be sure to leave plenty of room between each doughnut to allow them to proof
