Preheat the oven at 180°C (350°F) or gas mark 6
Slice the sheets of puff pastry into large squares then place them on a lined baking tray before lightly brushing with the egg wash
Bake in the middle of the oven for 8-10 minutes until golden brown then allow them to fully cool whilst the icing is prepared
Prepare the whipped cream by adding the double cream, icing sugar and vanilla extract to a cold bowl and whisk until stiff peaks are about to form
Transfer the whipped cream into a piping bag with a star nozzle
Slice the pastries in half horizontally then pipe the whipped cream on top
Cut the strawberries in half and place on top of the whipped cream before completing with the top half of the pastry
Dust with icing sugar and whip on any remaining whipped cream and top with a strawberry
Your strawberry and cream puffs are ready!
