Pat the fish dry to ensure that there is no excess moisture
In a bowl mix the plain and cornflour to make the coating
Coat the fish in the flour and set aside whilst you make the batter
In another bowl stir the plain flour, cornflour, baking powder, bicarbonate of soda and salt together
Add the water and mix until there are no lumps
Add the vinegar and mix – add the vinegar just before you intend to fry
Heat a pan with oil for deep frying until medium-hot ensuring that the oil is not too hot – to test this you can add a small drop of the batter into the pan, and it should rise with tiny bubbles surrounding it
Dip the fish into the batter and allow any excess to drop off then gently add the battered fish into the pan - there should be tiny bubbles surrounding them – and allow them to cook undisturbed for 3-4 minutes until golden brown before flipping and allowing to cook for another 3-4 minutes until golden brown on the other side
Your battered fish is ready!
