Ingredients

Flour Coating:

  • 50 g Plain Flour
  • 1 tbsp Cornflour

Batter:

  • 100 g Plain Flour
  • 50 g Cornflour
  • 1 tsp Baking Powder
  • ½ tsp Bicarbonate of Soda
  • 1 tsp Vinegar
  • 1 tsp Salt
  • Water as required

Instructions

  • Pat the fish dry to ensure that there is no excess moisture
  • In a bowl mix the plain and cornflour to make the coating
  • Coat the fish in the flour and set aside whilst you make the batter
  • In another bowl stir the plain flour, cornflour, baking powder, bicarbonate of soda and salt together
  • Add the water and mix until there are no lumps
  • Add the vinegar and mix – add the vinegar just before you intend to fry
  • Heat a pan with oil for deep frying until medium-hot ensuring that the oil is not too hot – to test this you can add a small drop of the batter into the pan, and it should rise with tiny bubbles surrounding it
  • Dip the fish into the batter and allow any excess to drop off then gently add the battered fish into the pan - there should be tiny bubbles surrounding them – and allow them to cook undisturbed for 3-4 minutes until golden brown before flipping and allowing to cook for another 3-4 minutes until golden brown on the other side
  • Your battered fish is ready!
