Add the onion, tomatoes, green chillies, and the garlic cloves into a food processor then process until there are no large lumps and a paste forms
In a large skillet pan heat up the vegetable oil on medium heat until hot
Add the onion and tomato paste then cook on medium heat for 4-6 minutes
Add the salt, chilli powder, turmeric powder and Kashmiri chili powder then cook the spices for 4-6 minutes
Add the finely chopped coriander and cook for 1-2 minutes
Cut the cod fish into chunks and add into the pan then spread the masala over the fish and cover thepan with a lid and allow to cook on medium to low heat for 15 minutes until the fish is cooked through – this may differ depending on which fish you use
Your cod fish curry is ready!
