In a bowl cream the eggs with the sugar until well combined
Add the milk, vegetable oil and vanilla extract to the bowl then whisk until well combined
Sift in the plain flour and baking powder then whisk until there is no trace of flour – ensure that you do not overmix the batter
Add 150g of the chocolate chips and fold into the batter
Transfer batter evenly into the muffin cases then top each muffin with a few chocolate chips
Bake in the centre of preheated oven at 160°C/325°F/gas mark 3 for 18-20 minutes until lightly browned
Your chocolate chip muffin sare ready!
