Add the oil into the pan and heat up on medium heat until hot
Add the black cardamom pods, whole black peppercorns, cinnamon, cumin seeds and cloves then sauté for 1-2 minutes until fragrant
Add the finely diced onions then cook on medium heat for 3-4 minutes until softened
Add the crushed garlic and crushed ginger then cook for 2-3 minutes
Add the lamb then cook for 5 minutes until it changes colours
Add the salt, black pepper, garam masala and dried fenugreek then cook for another 6-8 minutes
Add the water then give it a quick stir before covering and cook on low-medium heat for 1 hour until the meat is tender and cooked through
