Tomato Chicken Curry

This tomato chicken curry recipe is made in under an hour and only requires a handful of ingredients that you are sure to have locked away in your kitchen. A hearty and comforting meal for those busy weeknights when time in the kitchen is scarce.

Ingredients

  • 50 ml Oil
  • 800 g Chicken
  • 5 Tomatoes diced
  • 6 Garlic Cloves finely chopped
  • 1- inch Ginger crushed
  • 1 tsp Salt
  • 1 tsp Chilli Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Garam Masala
  • 1 tsp Kashmiri Chilli Powder
  • 1 tsp Cumin Powder
  • 1 tbsp Tomato Puree
  • 2 Green Chillies
  • Coriander
  • 1 tbsp Dried Fenugreek Leaves

Instructions

  • Add the oil into a pan and heat on medium heat until hot then add the finely chopped garlic cloves and crushed ginger then sauté for 1-2 minutes until fragrant
  • As the chicken is cooking finely dice the tomatoes and add into the pan then cook for 3-4 minutes until the tomatoes become soft
  • Add the salt, chilli powder, turmeric powder, Kashmiri chilli powder and garam masala then cook the spices for 4-5 minutes
  • Add the chicken and cook for 3-4 minutes until the colour changes and the chicken releases water
  • Cover and cook for 20 minutes until the chicken is cooked through
  • Add the green chillies and the tomato puree then cook the masala for 3-4 minutes until thickened
  • Add the finely chopped coriander and the dried fenugreek leaves then cook for 1-2 minutes
  • Your tomato chicken curry is ready!
