Chicken Do Pyaza

This chicken do pyaza recipe, sometimes called chicken dopiaza, is named as such due to the use of onions in two different ways. The onions are added to the masala to create a lucious and thick masala and some onion petals are added near the end to slightly soften before being served.

Ingredients

  • 50 ml Oil
  • 650 g Chicken
  • 3 Onions
  • 10 Garlic Cloves
  • 1- inch Ginger
  • 2 Tomatoes
  • 1 tsp Salt
  • 1 tsp Chilli Powder
  • 1 tsp Turmeric Powder Haldi
  • 1 tsp Kashmiri Chilli Powder
  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • 100 g Yoghurt
  • 150 ml Water
  • 2 Green Chillies
  • 1 tsp Dried Fenugreek Methi
  • Coriander
  • 1 Onions Petals
  • 2 Tomates Chunks

Instructions

  • In a pan heat up the oil on medium heat until hot then add the onions and cook for 3-4 minutes until softened
  • Add the finely chopped garlic cloves and crushed ginger then cook for 2-3 minutes
  • Add the chopped tomatoes and cook for 5 minutes until softened
  • Add the salt, chilli powder, Kashmiri chilli powder, cumin powder and coriander powder then cook the spices for 6-8 minutes – you may need to add a splash of water to prevent the spices from burning
  • Add the chicken and cook for another 6-8 minutes
  • Add the water and mix before covering and cook for 15 minutes
  • Add the yoghurt and cook for 5 minutes
  • Add the onion petals, tomato chunks and green chillies then cover and cook for another 10 minutes
  • Add the coriander and dried fenugreek then cook for 1-2 minutes
  • Your chicken dopyaza is ready!
