The first time I attempted this Terry’s chocolate orange cheesecake was when my brother’s friends came around. I had never made it before so I was a tad worried that they wouldn’t like it. I was rather proud of how it ended up, especially with the decorations and all but there was a problem as there was WAY too much filling and the biscuit base was kind of thin. I adjusted this accordingly to make it less filling and it turned out way better.
I know people have different preferences in terms of proportion. For example, my cousin always wants a half: half ratio of biscuit base to cheesecake filling whereas I prefer a greater ratio of cheesecake filling to the biscuit base. I also like my biscuit base to be quite buttery. In this cheesecake recipe, I use Hobnobs because I like the crunchiness of the biscuits to contrast with the chocolaty filling.
I know Terry’s chocolate orange is quite expensive, so I always wait for it to go on offer before I buy it. More often than not one of the major super stores does end up putting it on promotion. I have never put it at full price as for me it isn’t worth it. If you had a look at the recipe then you are probably thinking why does this crazy lady ask for such a specific amount of Terry’s chocolate orange? The reason being is that one whole Terry’s chocolate orange weighs 157g, so it just makes sense to use it all.
You do end up with quite a lot of whipped cream but that is because when I serve a slice, I usually add another dollop of whipped cream on the side. If you’re not really a fan of whipped cream, then you can just omit the decoration part of it.
I recorded the YouTube video for this recipe, and I was really annoyed because when I lifted the springform pan edges to release the cheesecake pan, my hand slipped, and I ended up dropping the pan. It ended up smudging one of the stars on the cheesecake so if you watch my video, you will notice that I only show one side of it. Turns out I am really clumsy! It still tasted delicious (obviously otherwise I wouldn’t be telling you to make it)
This Terry’s chocolate orange cheesecake has a buttery biscuit base with a deliciously creamy chocolate filling.
Terry’s Chocolate Orange Cheesecake
- For Base:
- 300g Hobnobs
- 150g Butter (melted)
- For Filling:
- 200g Terry’s Chocolate Orange
- 360g Cream Cheese
- 50g Icing Sugar
- 1 tsp. Vanilla Extract
- 200ml Double Cream
- For decoration:
- 100ml Double Cream
- 3 tbsp. Icing Sugar
- Mini Terry’s Chocolate Orange Segments
- In a food processor add the biscuits for the base and crush until fine crumbs form
- Add the melted butter and stir until the crumbs are combined
- Add the crumbs into the bottom of an 8-inch springform pan
- Use a spatula to press down and form an even base
- Leave to set in the fridge whilst the filling is being prepared
- Melt the milk chocolate in the microwave in 30 second bursts until completely melted
- In a separate bowl add the cream cheese, icing sugar and vanilla extract
- Whisk until combined
- Add the cooled chocolate and the double cream and whisk until thick
- Add the mixture onto the set biscuit base
- Allow the cheesecake to set for at least 4 hours or preferably overnight
- In a small bowl, add the double cream and icing sugar
- Whip until medium peaks form
- Transfer the whipped cream into a piping bag with a star nozzle
- Pipe around the cheesecake and top each star with a mini Terry’s chocolate orange segment
- Finish with grated chocolate pieces
- Your Terry’s chocolate orange cheesecake is ready!
