Ingredients

  • 280 g Self-Raising Flour sifted
  • 170 g Butter softened
  • 300 g Sugar
  • 4 Eggs
  • 1 tbsp. Vanilla Extract
  • 240 ml Milk

Instructions

  • Preheat the oven to 180°C/350°F/gas mark 4 then grease and line two 8-inch cake pans
  • In a bowl cream together the butter and sugar together until a pale mixture is formed
  • Add the eggs one at a time and whisk until the mixture is light and fluffy
  • Add the vanilla extract and incorporate into the mixture
  • Alternatively add the self-raising flour (in three parts) and the milk (in two parts) starting with the flour and ending with the flour
  • Whisk until just combined then divide the batter evenly between the cake pans
  • Bake in the centre of the oven for 30-35 minutes until golden brown – be sure to allow the cakes to completely cool before frosting
  • Your vanilla sponge cake is ready!
