Ingredients

  • 2 tbsp Vegetable Oil
  • 1 Onion finely diced
  • 3 Tomatoes diced
  • 1 tsp Salt
  • 1 tsp Turmeric Powder
  • ½ tsp Black Pepper
  • 400 g Canned Tuna drained
  • 100 g Peas frozen
  • 1 Jalapeño Chilli
  • Coriander

Instructions

  • In a large pot heat up the vegetable oil on medium heat until hot – if using canned tuna with sunflower oil then simply use the oil from the cans
  • Add the finely diced onions and salt then cook for 3-4 minutes until the onions are slightly softened – adding the salt with the onions helps to bring the moisture out of the onion to allow them to cook down and brown more evenly without burning the onions
  • Add the chopped tomatoes then cook for 6-8 minutes, stirring occasionally, until the tomatoes soften
  • Add the chilli powder, turmeric powder, and black pepper then cook the spices for 4-6 minutes adding a few tablespoons of water to prevent the spices from burning
  • Add the finely chopped chilli and cook for another 2-3 minutes
  • Add the tuna into the pan and gently mix into the spices then cook for 3-4 minutes
  • Add the frozen peas then reduce heat to low before covering and cooking for 5 minutes
  • Add the finely chopped coriander and cook for 1 minute
  • Your tuna curry with peas is ready!
