These tuna empanadas are a Spanish pastry that is absolutely delicious with chunks of tuna seasoned with black pepper, oregano and paprika encased in a flaky shortcrust pastry. Baked or fried these tuna fish empanadas are one of my all-time favourite Spanish recipes.

If you’ve never heard of empanadas, then you are missing out. These empanadas are a Spanish pastry that is absolutely delicious with chunks of tuna seasoned with black pepper, oregano and paprika encased in a flaky shortcrust pastry.

Ingredients

  • 435 g Canned Tuna
  • 2 tbsp Oil
  • 1 Onion finely diced
  • 2 Bell Peppers finely diced
  • 3 Garlic Cloves minced
  • 1 tbsp Paprika
  • 1 tbsp Dried Oregano
  • 1 tbsp Lemon Juice
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • Shortcrust Pastry
  • Egg optional

Instructions

  • Heat up the oil in frying pan on medium heat until hot
  • Add the finely diced onions to the pan and cook for 3-4 minutes until golden and translucent
  • Add the minced garlic then cook for another minute until fragrant
  • Add the diced bell peppers and cook for 6-8 minutes until softened
  • Drain the canned tuna and add into the pan then cook for 5 minutes, ensuring that you break down any chunks of tuna with the spoon
  • Add the salt, black pepper, paprika, dried oregano and lemon juice then cook for 2-3 minutes
  • Set aside to allow to cool completely before filling in the empanadas
  • Once the filling has cooled down cut your dough into circular discs then place a large spoonful of the filling in the centre (note 1)
  • Fold the discs and seal with edges by pushing down on the dough then twist and fold the edges of the empanada
  • Preheat the oven to gas mark 6 or 200°C (400°F)
  • Place the empanadas on a baking tray then brush the tops with egg wash to help them achieve a nice golden colour
  • Bake in the centre of the oven for 20 minutes until golden brown
  • Serve hot and enjoy!

Notes

Note 1 – I use shortcrust pastry because it is quite difficult to find empanada dough, but if you can find it use it! You can also make your own homemade empanada dough as well.
