This is the ultimate spaghetti bolognese recipe. Super easy and a true Italian classic with a rich tomato meat-based sauce that has tons of flavour without using any alcohol.

Ingredients

Pasta

  • 400 g Spaghetti
  • 2 L Water
  • 1 tsp Salt

Bolognese Sauce

  • 500 g Beef Mince
  • 125 ml Beef Stock
  • 800 g Tomato Passata
  • 1 tbsp Olive Oil
  • 2 Onions finely diced
  • 1 Carrots finely diced
  • 2 Celery Sticks finely chopped
  • 2 Garlic Cloves minced
  • 2 Sprigs Rosemary
  • 1 tsp Salt
  • 1 tsp Dried Oregano
  • Handful Basil finely chopped
  • 75 g Parmesan

Instructions

  • In a saucepan add the water and salt then stir until the salt is dissolved and bring it to a boil
  • Add the pasta to the water and cook for 10-12 minutes on a gentle simmer until the pasta is al dente – al dente refers to when the pasta is cooked just enough to retain a somewhat firm texture with a bit of a bite
  • Whilst the pasta is cooking in a large pot heat up the olive oil on medium heat until hot
  • Add the onions, carrots, celery sticks, chopped garlic cloves and the salt then cook for 3-4 minutes until the vegetables are softened (see note 1)
  • Add the beef mince and cook for 3-4 minutes until lightly browned, using the spoon to break apart any chunks of minced meat
  • Add the canned tomatoes then bring to a boil
  • Add the basil. rosemary and dried oregano then cover and allow to gently simmer for 1 hour until the sauce has thickened
  • Remove from the heat then stir in the parmesan cheese
  • Drain the pasta and either stir into the bolognese sauce or serve separately on top
  • Garnish with parmesan and basil then enjoy!

Notes

Note 1 – Adding the salt helps to bring the moisture out to allow them to cook down and brown more evenly without burning
