Ingredients

  • 1 kg Tomatoes
  • 150 ml Double Cream
  • 1 Garlic Bulb
  • 1 Red Bell Pepper
  • 1 Onion
  • 3 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Dried Oregano
  • Basil

Instructions

  • Preheat the oven to gas mark 4 or 200°C (390°F) then line a large baking tray with parchment paper
  • Cut the tomatoes, bell pepper and onion in half and place on the tray then without removing the skin of the garlic chop in half and place on the tray
  • Drizzle with olive oil then season with the salt and black pepper and massage into all the vegetables
  • Roast in the oven for 50 minutes until the vegetables are cooked then allow to cool down completely for at least 10 minutes
  • Squeeze out the garlic then add the tomatoes, bell pepper and onion along with the basil then pulse until everything is smooth and combined
  • Stir in the double cream and dried oregano then serve hot or cold
  • Your roasted tomato and basil soup is ready!
