Ingredients

  • 250 g Plain Flour
  • 1 tbsp Baking Powder
  • 1 tbsp Cocoa Powder
  • 100 g Caster Sugar
  • 150 g Light Brown Sugar
  • 160 g Butter melted
  • 2 tsp Vanilla Extract
  • 1 Egg
  • 1 Egg Yolk
  • 100 g White Chocolate
  • Red Food Colouring

Instructions

  • Add the plain flour, baking powder and cocoa powder into a bowl together and stir until well combined
  • In another bowl add the caster sugar, light brown sugar and melted butter together and mix until well combined
  • Add the eggs, vanilla extract and red food colouring then mix until well combined
  • Add the flour mixture and the white chocolate chunks and fold until a dough forms
  • Cover with clingfilm and refrigerate for at least 4 hours, preferable overnight
  • When ready to bake remove the cookie dough from fridge 30 minutes before taking two tablespoons of cookie dough and placing on a baking tray – allow for room for the cookies to spread
  • Bake in the centre of a preheated oven at 180°c/350°f/gas mark 4 for 10-12 minutes until the middle of the cookie is soft and underbaked and the outer edge is firm and set
  • Allow to cook for at least 15 minutes on the baking tray
  • Your red velvet cookies are ready!
