Ingredients

Cupcakes

  • 140 g Plain Flour
  • 140 g Unsalted Butter
  • 120 g Caster Sugar
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 2 tbsp Mixed Spice pumpkin spice
  • 2 tbsp Milk
  • 2 Eggs
  • ½ tsp Salt

Frosting

  • 100 g Unsalted Butter
  • 100 g Icing Sugar
  • 1 tsp Mixed Spice pumpkin spice
  • 1 tsp Vanilla Extract
  • 200 g Cream Cheese

Instructions

  • Preheat the oven to gas mark 4 or 180°C (350°F)
  • Add the flour, baking powder, mixed spice and salt to a bowl then give it a quick stir to combine before setting aside (see note 1)
  • In a large bowl beat the butter and sugar together for 2-3 minutes until there are no large grains and the mixture has become pale in colour
  • Add the eggs one at a time, fully incorporating after each addition, then with the last egg add the vanilla extract before beating
  • Alternate between adding the flour mixture and milk, beginning with the flour and ending with the flour, then whisk until well combined (see note 1)
  • Scoop the batter into the cupcake cases then bake in the centre of the oven for 12-15 minutes until golden brown
  • Cool in the tin for 5 minutes then remove and allow to cook completely on a wire rack whilst the frosting is prepared
  • In a bowl beat together the butter and cream cheese until smooth
  • Add the icing sugar in gradually and whisk until there are no grains visible
  • Add the mixed spice and vanilla extract then whisk until the frosting has thickened to your desired consistency
  • Transfer the frosting into a piping bag then pipe on to the cooked cupcakes
  • Your pumpkin spice cupcakes are ready!

Notes

Note 1 – Pumpkin spice is similar to mixed spice in the UK. Alternatively, you can make your own homemade pumpkin spice.
