Ingredients

  • 700 g Potatoes/Aloo
  • 50 ml Vegetable Oil
  • 1 tbsp Cumin Seeds/Jeera
  • 3 Onions
  • 1- inch Ginger
  • 5 Garlic Cloves/Lehsan
  • 1 Tomato
  • 1 tsp Chilli Powder
  • 1 tsp Salt
  • 1 tsp Turmeric Powder/Haldi
  • 1 tsp Garam Masala
  • 2 Green Chillies
  • 150 ml Water
  • 1 tbsp Dried Fenugreek Leaves/Methi
  • Coriander

Instructions

  • Heat oil in pan and sauté cumin seeds for a few minutes until fragrant
  • Add the diced onions and cook on medium heat for 4-5 minutes until softened
  • As the onions are cooking chop the tomatoes then add into pan before cooking for 5 minutes until the tomatoes are soft
  • Add the salt, chilli powder, turmeric powder and garam masala then cook the spices for a few minutes
  • Add the finely chopped green chillies and 2 tablespoons of the water to ensure that the spices do not burn and to give a more intense colour then cook for 2-3 minutes
  • Add the spices are cooking peel and chop the potatoes then add into the pan along with the rest of the water then cover and cook for 15 minutes until the potatoes soften
  • Add the dried fenugreek leaves and finely chopped coriander then cook for 1-2 minutes
  • Your potato curry is ready!
