Cupcake Sponge

  • 40 g Plain Flour
  • 25 g Cookie Crumbs crushed oreo cookies with cream removed
  • 100 g Sugar
  • 50 g Cocoa Powder
  • 60 ml Buttermilk
  • 1 tbsp Vegetable Oil
  • 1 Egg
  • ½ tsp Bicarbonate of Soda
  • ½ tsp Salt
  • ½ tsp Baking Powder
  • ½ tsp Vanilla Extract

Oreo Buttercream

  • 200 g Butter
  • 400 g Icing Sugar
  • 1 tsp Vanilla Extract
  • 2 tbsp Milk
  • 8 Oreo Cookies crushed


  • Preheat your oven to 180°C (350°F) gas mark 4 and line a cupcake pan with cupcake liners.
  • In a bowl, whisk together the flour, cocoa powder, baking powder, bicarbonate of soda, and salt then set aside
  • In a separate large bowl, cream together the softened butter and sugar until light and fluffy, which usually takes about 2-3 minutes
  • Add the egg, vanilla extract, and buttermilk then beat until well incorporated and there is no lumps
  • Gradually add the dry ingredient mixture and mix until just combined.
  • Gently fold in the Oreo cookie crumbs into the batter
  • Fill each cupcake liner about two-thirds full with the batter then bake in the preheated oven for approximately 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean
  • Once baked, transfer the cupcakes to a wire rack to cool completely
  • Prepare the Oreo buttercream by beating the softened butter until creamy and smooth and the butter has become pale in colour
  • Gradually add the icing sugar mixing well after each addition
  • Add the milk and vanilla extract, and continue to beat until the buttercream is fluffy and creamy
  • Gently fold in the finely crushed Oreo cookies, ensuring they are evenly distributed throughout the buttercream
  • Once the cupcakes are completely cooled, pipe or spread the Oreo buttercream on top of each cupcake
  • Gently press a whole Oreo cookie into the center of each frosted cupcake
  • Your Oreo cupcakes are ready!
