Lamb Chops Curry

This lamb chops curry is a twist on the traditional lamb karahi recipe. Lamb chops are cooked in a fragrant spicy masala to make them soft and tender. This spicy lamb curry is infused with traditional Indian spices and has a thick yet rich gravy sauce.

The succulent and juicy lamb chops with the flavourful sauce are the perfect accompaniment alongside boiled basmati rice. You can even serve with homemade garlic naan. You will not regret making this lamb curry recipe!

Ingredients

Marinade:

  • 1 kg Lamb Chops
  • 100 g Yoghurt
  • 1 tbsp Oil
  • 1 tbsp Lemon Juice
  • 1 tbsp Kashmiri Chilli Powder
  • 2 tsp Chilli Powder
  • 1 tsp Salt
  • 1 tsp Turmeric Powder
  • 1 tsp Garam Masala
  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder

Curry:

  • 100 ml Oil
  • 1 tsp Black Peppercorns
  • 2 Bay Leaves
  • 5 Cloves
  • 1 tsp Salt
  • 3 Onions finely sliced
  • 8 Garlic Cloves
  • 1- inch Ginger
  • 4 Tomatoes chopped
  • 100 ml Water
  • 1 tbsp Dried Fengreek
  • 2 Green Chillies
  • 1 tbsp Cumin Seeds crushed
  • Coriander

Instructions

  • In a large bowl add all the marinade ingredients, except the lamb chops, and mix until a thick and smooth paste forms
  • Add the lamb chops and coat evenly with the marinade then set aside
  • In a pan heat up the vegetable oil on medium heat until hot
  • Add the finely chopped garlic cloves, crushed ginger, black peppercorns, cloves and bay leaves then sauté for 1-2 minutes until fragrant
  • Add the finely diced onions and the salt then cook for 4-5 minutes until the onions are slightly softened – adding the salt with the onions helps to bring the moisture out of the onion to allow them to cook down and brown more evenly without burning the onions
  • Add the tomatoes and cook for 3-4 minutes until softened
  • Add the marinated lamb chops and cook for 6-8 minutes
  • Add the water then cover and cook for 45 minutes on medium heat until lamb chops are tender
  • Add the dried fenugreek leaves, green chillies and coriander then cook for 2-3 minutes
  • Add the crushed cumin seeds and cook for 1-2 minutes – crush the cumin seeds just before adding to the pan as this will ensure maximum aroma and taste
  • Your lamb chops curry is ready!
