When it comes to spicy chicken there isn’t anything more delicious than these hot wings. There are so many chicken wings recipes out there, but these are fool proof wings. These are the ultimate fried hot wings. If you’ve ever wanted to make your own fried chicken wings now is the time to try!
- 500 g Chicken Wings with skin
- 250 ml Buttermilk 250ml Milk + 1 tbsp Lemon Juice
- 1 tsp Salt/Namak
- 1 tsp Salt
- 1 tsp Chilli Powder
- 1 tsp Paprika
- 1 tsp Chilli Flakes
- 1 tsp Garlic Powder
- 1 tsp Black Pepper
- 150 g Plain Flour
- 200 ml Water
In a bowl, add the salt to the buttermilk and mix – if you do not have buttermilk then add 1 tbsp lemon juice/vinegar to whole fat milk and leave to sit for 5 minutes
Add the chicken wings to the buttermilk and ensure that the wings are fully submerged then leave to soak in the buttermilk mixture for at least an hour
In another bowl add the salt, chilli powder, paprika, chilli flakes, garlic powder and black pepper and combine together
Remove the chicken wings from the buttermilk mixture and add to the spice mixture and coat the chicken wings evenly then set aside to marinate for 1 hour
Make the flour batter by mixing together the plain flour and water
Heat a pan with oil for deep frying until medium-hot ensuring that the oil is not too hot – to test this you can add a small ball of the batter into the pan, and it should rise with tiny bubbles surrounding it
Dip the chicken wings into the batter and allow any excess to drip off then add into the pan – there should be tiny bubbles surrounding them – and deep fry at 180°C/350°F for 8-10 minutes flipping every few minutes until wings are browned – use a thermometer if you have one, if not fry at medium heat
