Wedges are the perfect appetiser or snack whether it’s for those busy weeknights or casual entertaining. Serve with a sprinkle of parsley for that pop of colour and you’re done. Forget fries, these potato wedges are a guaranteed crowd-pleaser!

Garlic Potato Wedges

These crispy garlic potato wedges are so simple to make yet packed with amazing flavours. Soft pillows on the inside encased with a garlicky crunch on the outside. Serve with a sprinkle of parsley for that pop of colour and you’re done!

Ingredients

  • 1 kg Potatoes
  • 3 tbsp Olive Oil
  • 1 tbsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Paprika
  • 1 tsp Mixed Herbs
  • Parsley optional

Instructions

  • Preheat the oven to gas mark 4 or 200°C (390°F) then line the baking trays with parchment paper
  • Wash the potatoes and cut each potato in similar sized wedges to ensure even cooking time
  • Add the garlic powder, onion powder, salt, black pepper, paprika and mixed herbs to the olive oil then mix until all the ingredients are evenly dispersed
  • Pour over the wedges and toss the potatoes to ensure all the wedges are coated evenly
  • Arrange the potato wedges in a single layer on the baking tray (see note 1)
  • Bake for 50 minutes near the top of the oven, turning the wedges over halfway until golden brown and cook through
  • Garnish with freshly chopped parsley and parmesan cheese
  • Your garlic potato wedges are ready!

Notes

Note 1 – If you have a lot of wedges then use another baking tray as it is important that the wedges are in a single layer to ensure that the potatoes all cook evenly
Ingredient Alternatives
Garlic Powder – minced garlic, garlic paste
Mixed Herbs – dried oregano, Italian seasoning
