Prep Time: 20 minutes

Ingredients

  • 500 g Okra/Bhindi
  • 50 ml Vegetable Oil
  • 2 Onions/Pyaz finely diced
  • 5 Garlic Cloves/Lehsan chopped
  • 1 Tomato chopped
  • 1 tsp. Salt/Namak
  • 1 tsp. Chilli Powder/Laal Mirch Powder
  • 1 tsp. Turmeric Powder / Haldi
  • 2 Jalapeño Chillies finely chopped
  • 1 tbsp. Water
  • Coriander/Dhaniyaa finely chopped

Instructions

  • Wash the okra then dry completely before removing the ends and cut into 1 cm pieces
  • In a large pan heat the vegetable oil on medium heat until hot then add the okra and sauté for 2-3 minutes before removing the okra from the pan and set aside
  • In the same pan add the finely diced onions and cook for 3-4 minutes until the onions are softened
  • As the onions are cooking chop the tomatoes then add into pan and cook for a further 3-4 minutes
  • Add the salt, chilli powder and turmeric powder then cook the spices for 6-8 minutes – add the water after a few minutes to prevent the spices from burning and to allow the spices to release their colour
  • Add the finely chopped bullet chillies and cook for another 2-3 minutes
  • Add the stir-fried okra and mix in the spices then cover with a lid and cook for 18-20 minutes on low-medium heat
  • Add the finely chopped coriander and cook for 1-2 minutes
  • Your bhindi masala is ready!

Thank you Sadia for this recipe. Can you please add some tips at the end about what to do if its Frozen Okra instead of fresh one. Or if this makes any difference or not.
