Ingredients

  • 50 ml Vegetable Oil
  • 450 g Eggplant/Aubergine Baingan
  • 1 Onion
  • 4 Garlic Cloves
  • ½ Tomato
  • ½ tsp Salt
  • ½ tsp Turmeric Powder Haldi
  • ½ tsp Chilli Powder
  • 1 Green Chilli
  • 50 ml Water
  • 1 tsp Dried Fenugreek Methi

Instructions

  • Heat up the oil on medium heat in a pan then add the finely diced onions and cook for 3-4 minutes on medium heat until slightly translucent
  • Add the finely chopped garlic cloves then cook for 2-3 minutes until fragrant
  • As the garlic is cooking finely dice the tomato then add into pan and cook for another 3-4 minutes
  • Add the salt, chilli powder and turmeric powder then cook the spices for 2-3 minutes
  • Add the finely slices green chillies and the water then cook for a further 4-6 minutes
  • As the spices are cooking wash and chop the eggplant into thin 1-inch slices then add into the pan then mix the masala in before covering and cook on low heat for 15 minutes
  • Add the dried fenugreek then cook for 1-2 minutes
  • Your eggplant curry is ready!
