Out of all of my cupcake recipes I have currently (which aren’t many I know, but still) this is my favourite because it has chocolate chips! I LOVE chocolate chips and they make the perfect addition to this chocolate chip muffins recipe. This chocolate chip muffin is an extremely simple recipe that anyone could literally make in minutes, so it’s perfect to get the kids involved.

There isn’t much to say about this chocolate chip muffin recipe because it is relatively simple to follow. The only thing I would say please refrain from over mixing the batter. Otherwise, your chocolate chip muffin will be too dense. Then you’re going to end up blaming me, which will just be rather upsetting for me. I love making these muffins and I know you all will love to as well.

These chocolate chip muffins are soft and moist and oozing with chocolate chips in each bite!

Chocolate Chip Muffins

Ingredients
  

  • 200 g Plain Flour
  • 200 g Chocolate Chips
  • 170g Granulated Sugar
  • 75 ml Milk
  • 40 ml Vegetable Oil
  • 2 Eggs/Anday
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder

Instructions
 

  • In a bowl cream the eggs with the sugar until well combined
  • Add the milk, vegetable oil and vanilla extract to the bowl then whisk until well combined
  • Sift in the plain flour and baking powder then whisk until there is no trace of flour – ensure that you do not overmix the batter
  • Add 150g of the chocolate chips and fold into the batter
  • Transfer batter evenly into the muffin cases then top each muffin with a few chocolate chips
  • Bake in the centre of preheated oven at 160°C/325°F/gas mark 3 for 18-20 minutes until lightly browned
  • Your chocolate chip muffin sare ready!
