Ingredients

  • 200 g Plain Flour
  • 200 g Chocolate Chips
  • 170g Sugar
  • 75 ml Milk
  • 40 ml Oil
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder

Instructions

  • In a bowl cream the eggs with the sugar until well combined
  • Add the milk, vegetable oil and vanilla extract to the bowl then whisk until well combined
  • Sift in the plain flour and baking powder then whisk until there is no trace of flour – ensure that you do not overmix the batter
  • Add 150g of the chocolate chips and fold into the batter
  • Transfer batter evenly into the muffin cases then top each muffin with a few chocolate chips
  • Bake in the centre of preheated oven at 160°C/325°F/gas mark 3 for 18-20 minutes until lightly browned
  • Your chocolate chip muffin sare ready!
