Ingredients

Marinade:

  • 1 kg Chicken Wings
  • 1 tsp Salt/Namak
  • 1 tsp Black Pepper/Kali Mirch Powder
  • 1 tsp Chilli Powder/Lal Mirch Powder
  • 1 tsp Paprika

Flour Coating:

  • 150 g Plain Flour
  • 50 g Cornflour
  • 1 tsp Salt/Namak
  • 1 tsp Black Pepper/Kali Mirch Powder
  • 1 tsp Chilli Powder/Lal Mirch Powder
  • 1 tsp Paprika

Buffalo Sauce:

  • 100 g Butter
  • 150 ml Hot Sauce
  • 1 tsp Vinegar/Sirka
  • 1 tsp Cayenne Pepper

Instructions

  • Pat the chicken wings dry thoroughly then add the salt, black pepper, chilli powder and ensure that the spices evenly coat the chicken wings before setting aside
  • In another bowl add all the ingredients for the flour coating then stir until well combined
  • Heat a pan with oil for deep frying until medium-hot ensuring that the oil is not too hot – to test this you can add a small ball of the dough into the pan, and it should rise with tiny bubbles surrounding it
  • When ready to fry dip the chicken wings into the flour coating one by one, shaking off any excess flour on the chicken, then add the wings into the fryer – there should be tiny bubbles surrounding them – and allow the wings to cook undisturbed for 4-6 minutes until golden brown before flipping and allowing to cook for another 4-6 minutes until golden brown on the other side
  • Once all the chicken wings have been fried set aside the wings and allow the oil to drain from the wings
  • In another pan melt the butter completely on low heat before adding the hot sauce, vinegar and cayenne pepper then cook on medium heat for 2-3 minutes until sauce thickens
  • Add the fried chicken wings and cook for a further 1-2 minutes until the chicken wings are fully coated with the buffalo sauce
  • Your buffalo chicken wings are ready!
