Ingredients

  • 50 ml Vegetable Oil
  • 1 kg Bottle Gourd lauki
  • 1 Onion finely diced
  • 10 Garlic Cloves chopped
  • 1 Tomato chopped
  • 1- inch Ginger crushed
  • 1 tsp Salt
  • 1 tsp Chilli Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Dried Fenugreek
  • 2 tbsp Water
  • 1 tbsp Cumin Seeds crushed
  • 2 Green Chillies
  • Coriander finely chopped

Instructions

  • In a pan heat up the vegetable oil on medium heat until hot
  • Add the finely diced onions, chopped garlic cloves and salt then cook on medium heat for 3-4 minutes until softened
  • Add the tomatoes and the crushed ginger then cook for 4-5 minutes
  • Add the chilli powder, turmeric powder and dried fenugreek leaves then cook the spices for 6-8 minutes – add a few tablespoons of water to ensure that the spices do not burn
  • As the spices are cooking peel and chop the bottle gourd into bite-sized chunks then add into pan before mixing into the masala
  • Cover and cook for 30 minutes – ensure that you check every 5-10 minutes and stir to prevent anything from sticking to the pan
  • Add the green chillies and finely chopped coriander then cook for another 1-2 minutes
