Ingredients

  • 120 g Plain Flour
  • 100 g Sugar
  • 55 g Unsalted Butter
  • 60 ml Milk
  • 75 g Blueberries
  • 1 tsp Baking Powder
  • ½ tsp Salt
  • 1 Egg
  • 1 tsp Vanilla Extract
  • Brown Sugar optional, for sprinkling

Instructions

  • Preheat the oven to gas mark 5 or 190°C (375°F)
  • Add the flour, baking powder and salt to a bowl then give it a quick stir to combine before setting aside
  • In a large bowl beat the butter and sugar together for 2-3 minutes until there are no large grains and the mixture has become pale in colour
  • Add the egg and the vanilla extract before beating until fully incorporated
  • Alternate between adding the flour mixture and milk, beginning with the flour and ending with the flour, then whisk until well combined (see note 1)
  • Fold in the fresh blueberries until evenly distributed
  • Scoop the batter into the muffin cases and sprinkle on a dusting of brown sugar
  • Bake in the centre of the oven for 30 minutes until golden brown
  • Your blueberry muffins are ready!

Notes

Note 1 – Split the flour into three parts and the milk into two, so you start with the flour and end with the flour.
