This semi-dry veg curry recipe is made with ladyfingers, otherwise known as okra, and the perfect pair with chapatti or rice. With its mild spice but delicious flavour this bhindi ki sabji is sure to impress anyone.

Ingredients

  • 50 ml Vegetable Oil
  • 700 g Okra Bhindi
  • 2 Onions
  • 1 Tomato
  • 10 Garlic Cloves
  • 1 tsp Salt
  • 1 tsp Chilli Powder
  • 1 tsp Turmeric Powder Haldi
  • 2 Green Chillies
  • 100 ml Water

Instructions

  • Heat up the oil on medium heat in a pan then add the finely diced onions and cook for 3-4 minutes on medium heat until slightly translucent
  • Add the finely chopped garlic cloves then cook for 2-3 minutes until fragrant
  • As the garlic is cooking finely dice the tomato then add into pan and cook for another 3-4 minutes
  • Add the salt, chilli powder and turmeric powder then cook the spices for 2-3 minutes
  • Add the finely sliced green chillies and the water then cook for a further 4-6 minutes
  • As the spices are cooking wash and chop the okra into 1-cm slices then add into the pan then mix the masala in before covering and cook on low heat for 25 minutes
  • Your bhindi masala is ready!
