Ingredients

  • 50 ml Oil
  • 1 Onion finely diced
  • 2 Potatoes
  • 3 Tomatoes
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 4 Eggs
  • 4 Green Chillies
  • Coriander

Instructions

  • In a large skillet pan heat up the vegetable oil on medium heat until hot then add the finely diced potatoes and sauté for 8-10 minutes until the potatoes are almost cooked through
  • Add the finely diced onions then cook for 3-4 minutes until the onions are slightly softened
  • As the onions are cooking finely dice the tomatoes then add into the pan before cooking for 5 minutes on medium heat, stirring occasionally, until the tomatoes soften
  • Add the salt and black pepper then cook for 2-3 minutes
  • Create 4 pockets in the mixture then reduce the heat to low and crack the eggs into a separate bowl before adding each egg into one of the pockets immediately one after the other
  • Cover with a lid and cook for 10-12 minutes until the eggs are cooked through or done to your personal preference – alternatively it is possible to bake the skillet at the top of a preheated oven at 190°C/375°F/gas mark 5 to cook the egg whites quickly
  • Your egg shakshuka is ready!
